  • 1 x medium sized eggplant
  • 1 x large onion, chopped
  • 4 x green chillies chopped
  • 3 tspn oil
  • 2 pinches mustard seeds
  • 2 pinches cumin seeds
  • 4 tspn roasted peanuts
  • 1 tspn shredded cocounut
  • 4 x cloves garlic
  • 1 tspn urad dal
  • 1 tspn chana dal


Chop the eggplant in to cube size pieces.Sprinkle some salt and set aside.

In a pan add Oil,Once oil is heated add mustard seeds,cumin seeds,urad dal and chana dal.Fry it till the dal turn to brown color

Now add green chillies and onions,let it cook till onions are translucent.
Add salt and eggplant.Cook it covered until the egg plants are soft.

Meanwhile,Take Roated peanuts,shredded coconut,Garlic and chilli powder ,make it in to coarse powder.

Once the Egg plants are cooked add the powder and cook it for more a minute.

Serve with rotis or rice.

  • Great tasty recipe Harika. I love eggplant dishes. They are such a versatile vegetable and the spice in the recpe is great. At Tonka restaurant we do a similar dish with green beens.
