- 6 x eggs(lightly beaten just with fork) )
- 200 g smoked speck (cut into smaller pieces )
- 1 pinch salt
- 1 pinch fresh ground black pepper (optional )
- 1 x fresh green top of shallots )finely chopped
- 2 x bread rolls
1)In pan fry on medium heat speck until you will see oil come from,then add eggs stir and cook that until eggs set up,but not to long because the eggs will be to dry.Season with salt and pepper.
2)Serve on a plate with bread – roll and garnish with shallots.
