  • 300 g marscapone
  • 150 ml thickened cream
  • 120 g icing sugar
  • 1 tspn vanilla extract
  • 2 punnets strawberries
  • 2 Tbls caster sugar
  • 1 x sweet short crust pastry base


Place the Mascarpone, cream, icing sugar and vanilla in a mixing bowl and beat with electric beaters until thick and creamy and then refrigerate until needed

Cut the strawberries in half and cut he tops off and macerate in 2 tablespoons of caster sugar for about 30 minutes

Pour the cream cheese mixture into the tart case and top with strawberries and dust with icing sugar before serving
