Ingredients

  • 6 L egg(boiled and cooled )
  • 500 g frozen stir -fry vegetables (cooked and cooled )
  • 1 x red capsicum (cut to strips )
  • 1/2 x green lebanese fresh cucumber (washed and chopped )
  • 6 x roma tomatoes (cut to vedges )
  • 1 x tin of corn kernels (drained )
  • 4 x fresh green top of shallots )finely chopped
  • 5 Tbls light mayonnaise
  • 1 cup fresh broccoli ( cooked and cooled )
  • 2 L carrots ( peeled and cut to 1/2 cm thick )
  • 1 Tbls sweet mustard
  • 2 cups cooked and cooled macaroni pasta
  • 2 pinches salt and pepper
  • 4 x medium gherkins(chopped to smaller pieces)
  • 200 g ham or salami (finely chopped,fried and cooled )

Method

1)In bigger bowl mix cooked and cooled vegetables.Add raw carrots,capsicum,cucumber,tomatoes,corn kernels,shallots,gherkins,mayonnaise,mustard,salami,salt,pepper and pasta.Taste and see,if anything need to be added.

2)The egg arrange last on top of it.
Serve with buttered toast or french stick
