  • 2 x figs
  • 2 x slices prosciutto
  • 1/8 cup walnuts
  • 20 g baby rocket
  • 1 Tbls olive oil (dressing)
  • 3 tspn balsamic vinegar (dressing)
  • 1 tspn honey (dressing)
  • 1/4 cup blue cheese
  • 1/4 cup cream cheese
  • 1/2 Tbls white vinegar
  • 1/2 Tbls olive oil
  • 1/2 Tbls milk


Preheat oven to 180 degrees.
Place walnuts on a baking tray and place in oven for 10 mins to roast.
Place prosciutto slices on a baking tray and place in oven for 5 mins to crisp up, being careful that they do not burn.

Prepare Whipped Blue Cheese:
Place blue cheese, cream cheese, vinegar and olive oil in a bowl and mix unti combined. Mix in milk until a smooth spreadable consistency is reached.

Prepare Dressing:
Combine Oil, Balsamic Vinegar and Honey in a jar and whisk with a fork until combined.

Prepare Salad:
Cut figs into quarters.
Place rocket, walnuts and prosciutto in a bowl and drizzle dressing over top. Mix to combined. Place this rocket mix onto a serving plate, arrange figs. Spoon whipped blue cheese on to plate.

This serves 1 person as an entree, light lunch.
