- 1 x onion (diced)
- 2 cloves garlic
- 1/2 tspn cardamon powder
- 1 tspn turmeric powder
- 3 Tbls olive oil
- 500 g basa (any white fish filets)
- 1/4 cup vegetable stock
- 1 x lemon
- 1 cup quinoa
- 1/4 cup pine nuts (toasted)
- 1-2 x green chilli (sliced thin)
1: Boil the Quinoa in 3 cups of water then rinse and set aside.
2: Place the onion, garlic, coriander, mint, cardamon, turmeric and a tablespoon of olive oil in a food processor to make a paste. Cut the fish in small portions and pour the herb paste over and mix well.
3: Add the remaining oil to a pan and braise the fish after you have turned the fish over add the vegetable stock and allow the fish to simmer for a few more minutes.
4:Add the toasted pine nuts to the quinoa and season with salt and pepper. Place the fish and fragrant sauce over the quinoa and sprinkle the chilli on top (the heat of the chilli is optional) and a good squeeze of lemon juice to finish off.

I just love love love the colour here and I adore quinoa so this is a very definite maybe .. must send my fisherman out to make a catch!
Hi Helen please let me know when you do try it its so quick and easy Im sure you will love it. Yes I love quinoa its a great replacement for pasta or rice.
