  • 2 cups fregola pasta
  • 1 cup mixed micro herbs (parsley, cress, chervll, basil)
  • 1 cup shredded shallots
  • 1 cup sourdough breadcrumbs
  • 1 cup olive oil
  • 1/2 cup lemon juice


brown the breadcrumbs in a pan stirred with 1/4 cup of the olive oil and 1/2 cup of the shallots and a good grind of good salt. boil the Fregola pasta till al dente. strain and drizzle a dash of olive oil over the top. in a jar mix a handful of shallots with the lemon juice and remaining oil and shake violently. return the pasta to the pot and throw in the shallot oil. the crumbs and some of the micro herbs . turn slowly and gently. serve small amounts individually . sprinkle remaining herbs on top with some shallots, zest and an extra squeeze of lemon juice.. parmesan cheese on the side.

(hint: i woud soak some shredded shallots in a bowl of cold water and they will curl. it looks pretty in the plate)
