  • 1 cup milk
  • 1/2 cup double cream
  • 2 Tbls caster sugar
  • 2 tspn corn flour
  • 3 x egg yolks
  • 1/2 x raspberry jam
  • 1 tspn port
  • 1 x variety of fruit
  • 1 tspn vanilla essence
  • 1 x tart shell


This recipe only makes a small amount of custard but feel free to make it by doubling the amount.

Bring the milk to the boil with the vanilla essence. Beat the egg yolks, sugar and corn flour in a separate bowl. Slowly pour in the milk a small amount at a time and whisk. Sieve back in to a pot and bring just to the boil, it will thicken. Don’t boil for too long or the mixture will split looking like scrambled eggs. Mix in the cream and pour in to the tart shell. Allow to set overnight and then place the fruit on top.

Fruit Glaze
Bring the jam and port to the boil and allow to cool slightly. Pour over the top of the tart and spread with a pastry brush.
