Ingredients

  • 1 big x lady pink apple - fine cubed
  • 1 middle sized x onion - fince cubed
  • 1 cup corn kernels
  • 5 big x gherkins european style sweet& sour - fine cubed
  • 1/4 cup fine cubed firm tofu
  • 1 tspn indian smoked paprika powder
  • 1 splash sunflower oil
  • 1 generous pinch seasalt
  • 1/2 tspn mustard
  • 1 splash white wine vinegar
  • 100 ml soy milk (no light soy milk!)
  • 1 pinch kala namuk - himalayan black salt
  • 1 pinch raw sugar
  • 1 bunch fresh chives - chopped
  • 1 generous splash of the gherkin water

Method

Start to prepare the potatoes — cook them and let them cool out complete.

Prepare your smoked tofu. Cut the firm tofu in small cubes and marinate with smoked paprika, seasalt and sunflower oil. Heat a frying pan with some extra oil and fry on higher heat until golden brown and crisp. When ready, place on paper towel and let it cool down.

Prepare your Mayonaise … mix the mustard, vinegar, kala namuk, raw sugar and soy milk into a high container and process with your hand processor. Very slowly add the oil whilst processing! The milk needs to be cold! As more oil you add, as thicker the consistency of the mayo will get. Just stop when you think the consistency is ok for you. Cool it.

Now prepare all your other ingredients. Chop the onion and chives, cut the apple and gherkins.

Use a bowl. Skin your potatoes, or leave the skin if you like and add into the bowl with all the other ingredients. The apple, onion, gherkin, corn kernels, tofu and chives. Season with seasalt and black pepper and add the mayo and a good splash of the gherkin water! Mix very well and refridgerate until you serve it. When you get it out of the fridge again maybe you need to add another plash of soy milk.

    • That is the Berlin version mixed with my mother in laws recipe. She is from east Germany. I put both together and out came a pretty great salad :-)

    • Kala Namuk is Black Himalayan salt. It gives an egg taste to vegan dishes. The salt is very healthy, contains all its minerals. Only the smell is very eggy, haha – most health food shops sell it next to pink himalayan salt. Its also online at Ebay available.
