- 1/2 tspn baking soda
- 1/4 tspn salt
- 230 g unsalted butter, softened
- 1 cup brown sugar
- 1 tspn vanilla extract
- 2 x large eggs, at room temperatur
- 1 & 1/2 cup dark choc chips
- 1/2 cup caster sugar
In a bowl, mix flour, with baking soda and salt.
In a bigger bowl, with a mixer cream butter with sugar untill very smooth and pale, add eggs one by one, beating well between them, then add the vanilla extract.
Mix in flour mixture until just combined, do not overmix, then stir in choc chips.
Can add more chips or add nuts or raisins etc.
Refrigerate for 30 mins.
To mage giant cookies, using an ice cream scoop, drop them on a baking tray lined with paper, leaving lots of room in between, around 8 per tray.
Bake in preheated oven at 170C fan forced, or 190 C normal oven, for approx 10-15 mins. Their colour should be light brown, with slightly darker edges.
They are ready when if you push them gently they move.
