Ingredients

  • 2 1/2 cups sr flour gluten free
  • 1 cup caster sugar
  • 1/2 cup polenta
  • 1 1/2 x lemons juice and zest
  • 2 x limes zest and juice
  • 250 g butter
  • 1/2 cup sour cream
  • 3 x eggs
  • 1 cup lime marmalaide
  • 1 x extra lime juice

Method

Line spring form tin with baking paper set oven at 170 deg C

Put all dry ingredients in bowl Melt butter add to dry ingredients along with zest , juice eggs and sour cream stir well place in lined tin Cook for 55 minutes
In Pan slowly heat marmalade and extra lime juice till syrupy . pour over top of cake
is nice served with mascarpone , cream or Greek yoghurt
