- 200 g dark sugar free chocolate
- 1 x egg yolk
- 250 g vanilla soy yoghurt
- 3 Tbls amaretto or brandy
- 20 g coconut oil
- 450 g frozen mixed berries

In a double saucepan or heatproof bowl, over a saucepan of simmering water, melt the chocolate and stir until melted. Slowly add the yoghurt, stirring to combine. Allow the mixture to cool slightly, but not too much that it becomes solid – you want it to be smooth. Keep stirring, and once the mixture is below an average of 40 degrees Celsius, can add the egg yolk –keep on stirring. If the mixture starts to cool too much you’ll need to put it back over the simmering water so that it stays smooth – but don’t let the egg yolk cook or the yoghurt split – keeping an eye on the temperature is vital. Stir through the amaretto and coconut oil. Divide the chocolate between ramekins. Serve with the berries or refrigerate until ready to serve.

In a saucepan bring the frozen berries to the simmer, uncovered, with enough water to cover the level of the berries. Allow to bubble and wait for the liquid to evaporate. Serve a spoonful dolloped over the Chocolate Cups.
