Ingredients

  • 3 x medium potatoes - washed, skin on
  • 3 x roma tomatoes - diced
  • 1 tspn crushed garlic
  • 1/2 x brown onion diced
  • 1/2 x lemon, juiced
  • 2 Tbls olive oil
  • 1/4 cup chopped fresh basil
  • 2 Tbls goats cheese
  • 2 pinches himalayan salt
  • 1 pinch pepper

Method

Step 1 – wash potatoes thoroughly and boil on stove top till soft

Step 2 – while potatoes are boiling, mix all other ingredients in a bowl

Step 3 – when potatoes are soft, drain and cut into cubes

Step 4 – add potatoes to mix while still warm and mix so cheese melts and creates creamy sauce

Alternatives: can also add ingredients like hot chicken, bacon, sautéed mushrooms and spinach to create a main meal rather than a side dish
