- 450 g 2 pkt hokkien noodles (450g each)
- 2 L large carrots
- 4 -6 Tbls oyster sauce
- 150 ml olive oil
- 1 L red capsicum
- 1 L green capsicum
- 3 cups boiling water
Carrots wash and peel and grate on medium holes on grater.Fry on medium heat 5 -8 minutes.Add noodles,water,salt,pepper and oyster sauce and heat through.
Capsicum wash and cut into small pieces and fold in.Taste and see if anything need to be added.Now you can serve.
PS.These noodles you can serve just as that or with any meat.

These noodles are so easy and tasty, and I love the colourful presentation too. Perfect side dish with stir-fry, or alone as a vegetarian dish.
