  • 1 1/2 cup milk
  • 1 1/8 cup caster sugar
  • 3 cups cream
  • 1 x tub mascarpone
  • 200 g red glace cherries, finely chopped
  • 180 g dark chocolate (70%), finely chopped
  • 100 g pistachio nuts, unsalted, finely chopped
  • 1 1/2 Tbls vanilla extract


Combine the milk and sugar in a bowl until the sugar is dissloved. Stir in cream, mascarpone and vanilla and mix until combined. Place mixture into the bowl of an icecream machine and churn until thickened 20-30 minutes. With 5 minutes to go add in the finely chopped glace cherries, finely chopped dark chocolate and finely chopped pistachio nuts. Once icecream has reached soft serve consistency it can be piped into the cannoli shells, or it can be placed in the freezer to firm up before piping into shells. Dust cannoli shells with icing sugar. Remainder of icecream can be frozen and eaten as is.

Cannoli Shells:
1 sheet of shortcrust pastry will make 4 cannoli shells. Depending upon the number of shells you wish to make will depend on the number of sheets of pastry you will need.

Cut shortcrust pastry into four equal squares. Lightly go over each square with a rolling pin to make slightly thinner. Roll each square around a cannelloni tube that has been lightly greased. Heat some oil in a medium saucepan (to come halfway up the side of the pan) and deepfry cannoli until golden. Allow to cool slightly before carefully removing from cannelloni tubes.

  • What kind of cream do you use? Single cream or double cream?
    And I don’t have an icecream machine so can I whisk it instead? Would it still work?
