  • 1/2 cup plain flour
  • 1 cup caster sugar
  • 4 x eggs
  • 1 tspn vanilla extract
  • 125 g butter, melted
  • 1/2 cup flaked almonds
  • 2 cups whole milk
  • 1 cup desiccated coconut


Preheat oven to 180C and grease a deep 24cm pie dish well.

Combine the sifted flour, sugar, coconut, eggs, extract, butter and half of the nuts in a large bowl. Gradually add the milk stirring until well combined. Pour into your prepared dish and bake for 35 minutes.

Remove pie from the oven and sprinkle over the rest of the nuts, bake a further 10 minutes.

Serve with cream or vanilla ice-cream

    • I’m not sure of original. It’s from my gran and back in the day everyone used to make it. I believe it’s one of them classic recipes that vary slightly with the amount of ingredients but not really the ingredients themselves. Quite a classic
