- 100 g salted butter cubed
- 200 g dark chocholate ( i use the 70% cocoa
- 1/4 cup firmly packed almond meal
- 2 tspn vanilla essence
- 2 x eggs
- 200 g raw sugar
- 150 g crushed cashews (can use any nuts)
- 1 Tbls almond meal to top
- 50 g chopped dark chocholate
1- Melt 200g chocolate chunks and cubed butter together in a double boiler (I use a pyrex bowl on a saucepan of boiling water).
2- Once melted stir in Raw sugar and Vanilla essence.
3- Beat in eggs one at a time
4- Stir through the almond meal
5- Mix in 1/2 the crushed cashews and 50g dark Chocolate chips
6- Pour into slice pan and sprinkle with remaining cashews and one Tbls extra Almond meal
7- Bake for 40 minutes at 180.c
These brownies are super soft, gooey and Delicious. They can be served hot with cream and Ice cream or cold with a fresh cup of coffee. They are the ultimate chocolate filled indulgence.

Thee is probably some U.N. convention limiting how delicious a brownie is allowed to look, and I think this recipe contravenes that standard!
