  • 4 x nests of papadelle pasta
  • 4 x italian sausages, skin removed and chopped into 2cm pieces
  • 1 x small onion finely diced


ingredients continued..
1 250g jar roasted capsicum, diced
3 button mushrooms, finely sliced
1 250g jar passata (Italian tomato sauce)
ΒΌ cup chopped parsley and basil
Extra basil leaves to serve
Parmesan shavings to serve
1 tablespoon oil

1. Heat a large frypan on a medium heat. Add oil and sausages and cook until brown on all sides. Add onion, roasted capsicum and mushrooms and cook for a further 3 minutes
2. Meanwhile, bring a large saucepan of water to the boil and add pasta Cook according to packet directions or until al dente, then drain
3. Add the passata to the frypan and reduce heat to low. Cook until the sauce thickens. Just before serving all the chopped parsley and basil and stir through
4. Serve the pasta with a spoonful of the sausage sauce and top with parmesan and basil
