- 1 kg chicken
- 1/2 kg jew mallow or molokhia
- 1 bunch coriander
Molokhia Lebanese Style
1 Kg of chicken
1/2 kg of Dry Jew. mallow (molokhia ) leafy vegetable
1 Head of garlic finely chopped
1Bunch of coriander finely chopped
1/2 a cup of oil
1 Onion finely chopped
Salt and pepper to taste
6 cups of water
1 Lemon cut into wedges
How to prepare:
Boil the chicken when cooked remove from the pot, keep the chicken broth.
Remove the bones from the chicken and cut it into small pieces.
Wash the Jew. mallow well, leave in the sieve to drain the excess water. With1/3 cup of oil, fry the onion, 1/2 of the garlic, coriander and the Jews mallow. Add the broth gradually to be absorbed by the leaves of the Jews mallow. Do not add all of the broth as it should not become too runny; add enough to ensure the leaves remain damp.
In a separate frying pan with oil add the remaining garlic, chicken and pepper, fry it until golden. Add cooked Jews mallow and salt to taste. Stir and leave over a low heat for 10 minutes if required add more broth.
Serve with rice and egg noodles and wedges of lemon.
