Jude’s Moroccan Lamb Shanks

Ingredients
- 6 x frenched lamb shanks
- 2 tspn harissa paste
- 1 tspn chilli paste
- 2 tspn ground cumin
- 2 tspn olive oil
- 1/4 tspn ground cinnamon
- 1 tspn crushed coriander seeds
- 2 cloves garlic
- 1 pinch salt and pepper
- 1 x tin tomatoes
- 1 pinch grated lemon rind
- 1 x red capsicum
- 1 x green capsicum
- 1 tspn middle eastern spices
- 1/2 cup dry white wine
- 1/2 bunch fresh coriander
- 1 x knob ginger
- 1 sprig rosemary
Method
1. Combine all the above ingredients except the lamb shanks. (Feel free to sample the white wine, purely to test for the quality of flavour of the wine.)
2. Place lamb shanks into slow cooker. Cover with the mixture and leave overnight (overnight is not essential, but will help the flavours develop)
3. Cook on low setting for 8 hours.
4 Turn slow cooker up to high, prior to adding 2 tbsp tomato puree to thicken if necessary, plus a pinch of sugar if needed.
5. Season and serve, garnished with a sprinkle of chopped coriander.
