Ingredients

  • 1 kg chicken breast
  • 2 L onions
  • 1 bunch shallots
  • 2 bunches broccoli
  • 1 L can of diced pineapple
  • 1 L left over pineapple juice (sauce)
  • 6 Tbls abc soya sauce (sauce)
  • 1 pinch salt n pepper (sauce)
  • 3 cloves garlic crushed or diced (sauce)
  • 3 Tbls jimmy's stae sauce (sauce)
  • 1/2 cup water (sauce)

Method

mix pineapple juice, peanut butter,garlic,salt n pepper , jimmy’s sate paste,sweet soy and water in a bowl and mixed together and let sit till end of cooking process.

Slice chicken breasts and i prefer to do this whilst it is half frozen as you get thinner slices.

Cut onions and broccoli into large peices and use the stalk of the brocolli as this is the best part.

Cut shallots into 2cm peices

First dry fry the onion till it is warmed up and set aside

Fry chicken peices with a little oil till slightly golden then add pineapple peices,onion,broccoli till they are heated through.

Pour the sate mixture over all of this and toss or stir all these together till sauce is hot and if it is too thick you can add some more water to make it more saucy , but if you want it to be thicker add some more peanut butter for thickness.

Now add the shallots and toss or stir through and serve. yumm

if you have peanut butter sweet soy and the jimmy’s past you can make at least 5 meals out of them and dinner should only cost you what the chicken and vegies are on the day great way to impress and save $$$$$

I cooked this for 10 staff at taren point it cost $31.62 and i doubled or trippled the amount and thats what makes this great value for money.
