  • 4 x lamb chops (i use forequarter chops)
  • 2-3 x onions, thinly sliced
  • 1/2 cup breadcrumbs


Trim chops of visible fat. Mix breadcrumbs, salt and pepper in a shallow dish. Coat the chops in breadcrumbs. Heat olive oil in a fry pan over medium heat. Fry until brown and crispy on each side.
Put half of a sliced onion under the each individual piece of lamb.
Cover with remaining onions. Reduce heat to low. Cover with lid and cook for 25 minutes or until tender.
