Ingredients

  • 500 g lamb mince
  • 1/2 cup breadcrumbs
  • 1 x egg
  • 8 x vine ripe tomatoes
  • 2 x carrots
  • 3 x celery stalks
  • 1 x large onion
  • 2 x 400g tinned tomatoes
  • 1 x can tomato puree
  • 2 Tbls tomato paste
  • 4 cloves garlic
  • 1 bunch basil
  • 1 Tbls mustard seeds, ground
  • 1 sprig rosemary
  • 3 Tbls olive oil
  • 2 L vegetable stock
  • 3 Tbls salt & pepper

Method

Meat Balls

Preheat the oven to 220 deg Celsius

In a food processor, bled the mince with a few springs of rosemary, the breadcrumbs and the egg. Scoop out tablespoon balls and roll. Cook and brown the meatballs.

In a roasting tray, roast the tomatoes and garlic with 1 tablespoon of salt and a splash or oil until the tomatoes begin to blacken slightly. Take out and peel the skins off the tomatoes and garlic. Mash with a fork and set aside.

In a large saucepan, saute the onion, carrot and celery. This should be the base of all tomato sauces. Add the roasted tomatoes, tinned tomatoes, tomato puree and paste. Add the vegetable stock and bring to the boil. It is important to use a vegetable stock as a beef or chicken will overpower the sauce. Add all the herbs and mustard seeds and allow to boil until it reduces by half.

Push the tomato sauce through a sieve and make sure you push through as much liquid as possible. Ensure you scrape the bottom of the sieve getting all the thick paste. Pour the sauce back in to the pan and add the meat balls. Allow to cook until it reduces to your desire. Check the sauce and add any salt and pepper required.

Serve with the pasta of your choice and a good quality cheese.

  • I love lamb mince, but we mince our own. Turkey would work I rekkon. I am looking forward to getting some hogget which I think would do well here …

    • Thank you! It is one of my favourites and my 2 year old can eat it all night. I mince my own lamb too usually the shoulder. I have never used turkey so I can’t comment.

      • we are real do it ourself loonies …. very proud of our sausages …. would love to get hold of venison and I dream of duck sausage lol .. as I said loonie :D
