  • 250 g beef or lamb mince
  • 2 x small zucchinis (grated)
  • 1 bunch brocollini (cut into small pieces)
  • 225 g tin of beetroot
  • 100 g cream cheese
  • 100 g parmesan cheese
  • 1 x packet of lasagne sheets


1) Pour the tin of beetroot (juice and all) into a medium sized saucepan on medium heat
2) Add the mince to the saucepan, stirring to make sure it cooks evenly
3) When the meat has started to brown add the grated zucchini and brocollini to the saucepan and cook for another 5-10 minutes, stirring often to make sure the vegetables and meat are mixed together evenly
4)Preheat the oven to 200 C
5) Mix the cream cheese and parmesan cheese together in a microwave safe bowl and heat for about 30 seconds, till soft and easy to spread
6) Place a layer of lasagne sheets across the bottom of a 2L oven safe dish
7) Spread a layer of cheese over the sheets, then spoon half of the meat and vegetable mix over the top
8) Add another layer of lasagne sheets, cheese, and then the rest of the meat and vegetable mix
9) Add a final layer of lasagne sheets and cheese
10) Bake for 20 minutes, or until the cheese on top starts to brown

This recipe can also be easily made gluten free, with GF lasagne sheets, and/or dairy free by replacing the cheese with a soy cheese substitute (eg Tofutti). It is also a great variation for people who can’t eat tomato, such as those on low acid diets
