Lazy Light Lucious Lasagna

Ingredients

  • 4 cups tomato sauce (see below)
  • 2 1/2 cups white sauce (see below)
  • 500 g lean mince
  • 250 g grated mozzarella

Method

My Lasagne (I developed this for my family as we all love lasagne but it didn’t love us!! This is my low fat version that was a great compromise and it’s healthier)
Ingredients:
Tomato Sauce:
6 large ripe tomatoes
½ tub tomato paste
4 basil leaves
2 cloves garlic
1 large brown onion
Ground salt & pepper

White Sauce:
250gms ricotta cheese
250gms low fat natural yoghurt
125ml fresh low fat thickened cream
1 tbles shaved parmesan.

Packet Lasagne Sheets
500gms lean mince
Pkt grated mozzarella cheese (low fat if you can get it)

Method:
Tomato Sauce:
Finely chop the onion & garlic & basil and lightly sweat in a heavy based pan, do not let go brown.
Chop the tomatoes up and add them to the pan
Cook gently until tomatoes are soft, add ½ tub of tomato paste, salt & pepper, mix to combine.
Blend all ingredients & set aside.

White Sauce:
Blend all ingredients & set aside.

1. Brown mince off in heavy pan, the browning process add lots of flavour so don’t skimp on this step.
2. Add tomato sauce
3. Place a layer of lasagne sheets down in your dish
4. Add some of the meat mixture
5. Then dot the sauce on the meat mixture
6. Repeat 3,4 & 5 twice more finishing with a layer of lasagne sheets.
7. Spread the remaining white sauce on the top layer
8. Cover the top with grated Mozzarella and cook slowly for 40mins or until brown.

Low fat healthy Lasagne that tastes so good
