- 350 g pasta(penne suits this recipe)
- 1 Tbls olive oil
- 2 cloves garlic
- 50 g butter
- 1 x lemon(juice & rind)
- 2 cups shredded cooked chicken
- 1 cup broccoli florets
Cook pasta in boiling salted water adding broccoli in last five minutes of cooking time. Meanwhile, heat oil in heavy based saucepan over medium heat, add garlic and cook till fragrant. Add Lemon juice, rind, butter and chicken stirring to coat chicken with sauce. Drain pasta & broccoli (reserving 1/4 cup of cooking liquid) and return to pan. Add cooking liquid and chicken mixture and stir well (If a little dry you can add a drizzle of good quality olive oil ). Top with freshly grated parmesan and serve.
