- 2 cups self - raising flour
- 1 cup milk
- 2 Tbls lemon zest
- 1/4 cup lemon juice
- 1 tspn vanilla paste
- 2 x eggs
Add dry ingredients to a bowl and add eggs, milk, lemon juice and lemon zest.
Whisk until no lumps and a smooth batter is formed.
Let batter sit for at least 1 hour.
Cook pancakes in fry pan until golden.
Tip: always let batter sit it makes for much better pancakes.
