- 3/4 cups vegetable oil
- 2 x eggs
- 1 Tbls lemon, rind
- 2 Tbls lemon juice
- 1 cup natural yoghurt
- 1 3/4 cup caster sugar
- 2 cups self - raising flour
1) Preheat oven to 180°C
2) Place the oil, eggs, rind, lemon juice, yoghurt and sugar in a bowl and whisk to combine.
3) Sift over the flour and stir until smooth.
4) Pour the mixture into a greased 24cm tin and bake for 35 minutes or until cooked when tested with a skewer.
If desired, dust on some icing sugar on top after it is cooked.
