  • 2 Tbls sunflower oil
  • 1 x large onion, thinly sliced
  • 2 x garlic cloves, finely sliced
  • 2 Tbls medium-hot indian curry paste
  • 1 cup dried red lentils, rinsed & drained
  • 3 cups vegetable stock
  • 2 Tbls tomato paste
  • 500 g cauliflower, cut into small florets
  • 1 cup frozen peas, thawed
  • 2 Tbls fresh coriander leaves plus extra to garnish


Heat oil in a large pan over medium heat, add onion, garlic & curry paste, then cook, stirring, for 5 mins until onion softens. Add lentils and stir to coat. Add stock and tomato paste, bring to the boil, them simmer covered over low heat for 15 mins. Return heat to medium, add cauliflower and simmer, covered, for 8-10 mins until cauliflower softens. Add peas and coriander for the final 2 mins. Serve with pita triangles and coriander to garnish.

  • A very pleasant and tasty dahl and very easy to cook. I had difficulty with finding ‘medium heat indian curry paste’ as, in Australia, is a case of a paste for everything under the sun. I substituted Ayam brand curry powder (Malaysian) 2 teaspoons which worked very well
