Ingredients

  • 185 g butter, melted
  • 250 g plain sweet biscuits, crushed
  • 2 tspn gelatine
  • 1/2 cup boiling water
  • 395 g can sweetened condensed milk
  • 3 Tbls lime juice (tablespoons)
  • 1 cup whipped cream
  • 2 tspn gelatine
  • 1/2 cup boiling water
  • 1 cup lemonade
  • 3 Tbls lime juice (tablespoons)
  • 2 Tbls vodka (tablespoons)
  • 50 g white chocolate, melted

Method

Grease an 11x7x1.5 inch pyrex dish. Combine butter and biscuits in a food processor and press firmly into base of pyrex dish. Refrigerate for 1/2 hour.

Meanwhile dissolve 2 tsp gelatine in 1/2 cup of boiling water. Place in a medium bowl the condensed milk and mix in the lime juice. Gently fold in whipped cream then stir in gelatine mix until well combined. Pour creamy mixture over the biscuit base; refrigerate for 1 hour or until set.

Next, to make vodka lime lemonade jelly, dissolve 2 tsp gelatine in 1/2 cup of boiling water. Place the lemonade, lime juice & vodka in a bowl. Stir in the gelatine mix until well combined. Pour over creamy base ; refrigerate for 1 hour until set.

Melt white chocolate and pipe a flower shape onto baking paper until set; sink into a sliced square of the Lime Vodka Lemonade Jelly Slice and serve.
