Ingredients

  • 2 x large eggs
  • 3/4 cups caster sugar
  • 1 cup mashed, over ripe bananas
  • 1/3 cup greek yoghurt
  • 1 Tbls vegetable oil
  • 1 Tbls vanilla extract
  • 1 3/4 cup plain flour
  • 2 tspn baking powder
  • 1/2 tspn bicarbonate soda
  • 1/2 tspn salt
  • 1 pinch ground cinnamon
  • 1 handful crushed walnuts

Method

Preheat oven to 160° C, lightly grease a non-stick loaf tin.
In a large mixing bowl, cream eggs and sugar until thick – about 5 mins on medium. Add mashed bananas, yoghurt, oil, cinnamon and vanilla.
Sift dry ingredients in and mix until combined. Hand mix in walnuts.
Place the (very wet) mix into prepared tin and bake for approx 50 mins, bread is cooked when a skewer inserted in the middle comes out clean, and you should have a light golden crust.

Delicious sliced and warmed for breakfast!
