  • 2 cups breadcrumbs
  • 1 cup maccadamia nuts unsalted
  • 2 x eggs, lightly beaten
  • 4 x barramuni fillets
  • 1 x large lemon


Roughly chop Maccadamia Nuts and mix with breadcrumbs.
Season with Salt and Pepper.
Lightly beat eggs in a shallow dish. ( Add a teaspoon of milk to the egg wash)
Dip both sides of fish in egg. Coat with breadcrumb mixture pressing the fish into the breadcrumbs with your fingertips.
Repeat with all fish pieces. Cover and chill for 30 mins.
Heat oil in a non-stick frying pan to 180c or medium heat.
Cook fish for 3-4 mins each side depending on thickness of fillet until golden brown.
Serve with a fresh garden salad, Lemon wedges and Aioli.
NOTE: To make your own Aioli roast 1 head of Garlic for 45mins, or until soft. Squeeze flesh from skin, Mash flesh and stir through 1 cup of a good quality whole egg mayonnaise.
