Ingredients

  • 2 x breast duck
  • 1/2 cup maple syrup
  • 1/2 cup toasted walnuts
  • 1 handful rocket
  • 1 handful sliced celery soaked in a dash of white vinegar and sugar
  • 1/2 x finely sliced white onion
  • 1/4 cup olive oil
  • 2 Tbls white vinegar
  • 1 pinch icing sugar

Method

soak for 1/2 day 2 duck breasts in 1/2 cup good maple syrup. grill skin side up till super crispy then turn to cook till pink. rest for 10 minutes and finely slice. toss the sliced white onion, olive oil, white vinegar and icing sugar till the onions bruise and wilt. combine the celery, walnuts, rocket, soaked celery, and turn gently in a bowl with the onions and dressing. serve the mixture between 2 plates, and sprinkle with parsley and /or yellow marigold petals for great effect. (they are edible)
great for lunch for entree.
