  • 2 x salmon fillets
  • 1 1/2 Tbls sweet paprika
  • 1 tspn smoked paprika
  • 1 Tbls ground dried oregano
  • 1 Tbls ground dried thyme
  • 1 tspn cayenne pepper or to taste
  • 1 tspn finely ground black pepper
  • 1 tspn finely ground white pepper
  • 1 tspn garlic powder
  • 1 tspn onion powder
  • 1 tspn salt


Combine all the spices together, then use as much as you want (may end up with too much) and spread onto a plate. Brush salmon fillets with a little olive oil, then roll into the spice mixture.
Fry fillets in a non stick pan till browned all over then finish off the cooking in the oven at about 200 deg until cooked to your liking. In the last 2 minutes of cooking drizzle the salmon generously with the maple syrup and return to the oven.

Mango Salsa
1 ripe mango, diced
1 lebanese cucumber, diced
2 tablespoons chopped spring onions
2 tablespoons chopped coriander
juice of 1 lime
1 teaspoon fish sauce
1 teaspoon sugar
sliced chilli

PS… or you can just buy cajun seasoning from your supermarket, taste just as good
