Ingredients

  • 1 kg chicken drumsticks
  • 1 clove garlic, crushed
  • 1 x onion, chopped finely
  • 3 cups chicken stock
  • 3 Tbls extra light philly cream for cooking
  • 1 tspn curry powder
  • 1 cup basmati rice

Method

Serves 4
* spray olive oil in pot
* fry onion, garlic and curry powder for 2 minutes
* add chicken, fry until skin turns Brown
* add chicken stock, bring to boil. Cover and simmer for 30 minutes
* remove bones, pulling the chicken off the bones and returning to pot
* add 1 cup of frozen peas and corn
* simmer for a further 10 minutes
* remove from heat, adding the cream and stirring it all together
* serve with steamed rice
