- 1 kg kilo of minced meat
- 3 L large eggplants
- 1 L onion finly chopped
Meat balls wrapped in Eggplant
1 Kilo of minced meat bvcxz
3 eggplants sliced length wise
1 peeled onion, finely chopped
½ cup finely chopped parsley
4 tablespoons tomato paste
2 tomatoes chopped fine.
2 table spoons Salt and pepper to taste
I table spoon paprika
1/2 a cup of oil for frying
how to prepare:
Cut eggplant into slices approximately 1 cent meter, salted and placed in a sieve for an hour
Wash, dry and fry in oil or oil the slices and put under the grill
Put meat in a bowl and add chopped parsley, onion, pepper and salt and then make into medium rolls in the hand and then fry to sear the meat.
Take a sliced eggplant and put the partially cooked meat kebabs on a slice of eggplant and roll, repeat until all are rolled then place in a deep oven tray.
In a separate bowl of 4-6 cups of hot water add the tomato paste, paprika and salt, mix and add to the tray followed by the cut tomatoes then put into a preheated oven 180c for an hour take out and let stand for 10 minutes then serve with rice
