Ingredients

  • 6 x eggs boiled
  • 2 Tbls light sour cream
  • 2 Tbls light mayonnaise
  • 1 Tbls of chives or shallots very fine sliced
  • 200 g packed of smoked salmon
  • 8 x cooked croissants
  • 1 pinch of black pepper ( to season optionial)

Method

1)In deep saucepan boil eggs for 8 minutes,then cool in cold water.

2)Peel eggs,and chop.Combine sour cream,mayonnaise and chives.Season with black pepper to taste.Fold through the eggs.

3)Croissant,cut in half (horizontally ) and the bottom spread with the eggs mixture.Top eggs with smoked salmon and put over the top of croissant.

4)Serve immediately.
