Ingredients

  • 2 cups plain flour
  • 1/3 cup caster sugar
  • 175 g butter
  • 2 x egg yolks
  • 2 Tbls water
  • 1/4 cup cocoa powder
  • 200 g dark chocolate
  • 200g g milk chocolate
  • 1 cup thickened cream
  • 2 x egg whites
  • 1/2 cup caster sugar

Method

Process flour, cocoa, butter & sugar until resembles fine bread crumbs. Add egg yolks and water. Process until dough just comes together. Turn out onto lightly floured board. Knead gently until smooth. Shape into a ball, wrap in cling wrap and refrigerate for at least an hour before using. Roll out and press into 3 x 12cm diameter round tart tins, baking blindly at 180°C for 15 minutes. Allow pastry cases to cool before commencing the next step.

To make chocolate filling, place the chocolate and cream in a small pot over low heat and stil until melted and smooth. Pour into 3 x tart pastry cases and refrigerate for 30 minutes until set.

To make meringue top, preheat oven to 200°C. Put egg whites in electric mixer bowl and beat until soft peaks form. Slowly add sugar a little at a time and beat until mixture is thick and glossy. Spoon onto individual tarts and bake for 7-10minutes until the peaks are golden and meringue set. Allow tarts to cool and serve with fresh blueberries. Enjoy! :)

      • oh dear! I have to just hate that I cant do this! I would have to change too much to be gluten, lactose and processed white stuff free … too pretty for me to even try mucking up …. a deserving tart ….

  • Caroline, do you realise what you are doing when you are rating every recipe you rate (bar one) as 0.5 stars? Did you see this tart drop from first place to 70th place because of your rating? You say it’s not too bad, meaning it is good and yet you did that!! What are you doing??? I hope some justice can be done here!! Sure, if you thought it was a stolen recipe or it looks like mud or puke or it poisonous or the photo is stolen from a book, then go ahead and give a 1/2 star, but please keep in mind that this competition is between cooks learning and sharing with each other, not people trying to break other people’s hearts!!
