- 7 x anchovies
- 1 Tbls lemon juice
- 160 g butter
- 2 cloves garlic
- 2 Tbls flat leaf parsley
- 4 x minute steaks
- 50 ml olive oil
*This is a great dish to cook over a campfire or when you are on holidays. It only takes a few minutes to prepare and then to cook. The key to this recipe is to buy great quality butter and, of course, anchovies and steakâ€” please don’t skimp on quality as it will show in the final dish, and really you should treat yourself to the best. Ideally this is served with crispy fries or roasted potatoes, a crisp salad and cold beer. If you aren’t particularly fond of anchovies, then just make a lovely herb and garlic butter or replace the anchovies with chilli flakes for a bit of added spice.*
To make the anchovy butter, place the anchovies, lemon juice, butter, garlic and parsley in a food processor and blend until all combined. Continue to blend while adding salt and pepper to taste. Transfer to a bowl and leave at room temperature to allow it to melt perfectly on the steak when serving.
To cook the steak, heat a frying pan over medium-high heat. Before adding the meat to the pan, season the steaks with salt and pepper and drizzle them with oil.
Place the steaks on the hot pan and cook for 30 seconds on one side or until golden, then turn over and cook until golden again. Remove from the heat and serve with a dollop of anchovy butter on top and a garden salad on the side.
