Ingredients

  • 150 g dark chocolate
  • 1 Tbls water
  • 150 g unsalted butter
  • 1/2 cup castor sugar
  • 3 x large eggs
  • 3/4 cups plain flour
  • 1/4 cup ground almonds
  • 1 tspn nutmeg
  • 2 Tbls castor sugar (extra)
  • 4 Tbls brandy (optional)
  • 1/3 cup apricot jam
  • 1 1/2 cup sweetened dried cranberries
  • 100 g dark chocolate (for drizzle)
  • 75 g unsalted butter (for drizzle)

Method

Grease and line a 23cm cake tin.

Preheat oven to 180C (170C fan forced).

Melt chocolate over hot water. Stir in water and set aside to cool a little.

Cream butter and sugar until light and fluffy. Beat in egg yolks one at a time. Transfer to large bowl and stir in chocolate mixture, then flour, ground almonds, and nutmeg.

Beat egg whites until soft peaks form, then gradually add extra sugar.

Fold egg whites into main mixture.

Spread into cake tin.

Bake for approximately 30 minutes, standing for 5 minutes before turning out to cool on wire rack.

(Optional: sprinkle cake with brandy.)

Heat jam and spread over top of cake. Allow to cool slightly, then sprinkle cranberries over the top. Allow jam to set a little.

Melt chocolate and butter over hot water, allow to cool a little, then drizzle over the top of the cake. The chocolate should not fill in the crevices entirely or cover the cake smoothly but show off the rough texture created by the cranberries and drip down the sides.
