  • 180 g butter softened
  • 1/2 cup brown sugar
  • 1 x egg
  • 1 tspn vanilla extract
  • 1 cup plain flour
  • 1 cup sr flour
  • 1 Tbls honey
  • 60 g butter - extra
  • 1 cup icing sugar, extra
  • 1 x little warm water
  • 1/4 cup strawberry or raspberry jam


Preheat oven to 180 degrees and line a cookie tray with baking paper.

Cream butter and sugar. Add egg, honey, vanilla and flour.

Mix until combined and a dough forms.

Roll teaspoons of dough into balls and press down with the palm of your hand to flatten.

Repeat until all dough is used.

Bake in oven for 15 min or until golden brown. Place on cooling rack.

When cold join with icing and jam.

Icing: In a small bowl sift icing sugar and add softened butter. Mix together with a little warm water until a stiff icing forms.
