- 2 Tbls olive oil
- 2 cloves garlic, crushed
- 1 x onion (diced)
- 3 x tomatoes deseeded and diced
- 1/3 cup tomato puree
- 1 Tbls soft brown sugar
- 1 tspn anchovy sauce
- 1 Tbls tamarind sauce
- 1-2 tspn crushed dry chilli (optional amount)
- 1 cup chicken stock
- 1 kg fresh mussels
1: Wash and remove the beards from the mussels, set aside.
2: In a large pot add the oil and sauté the onion and garlic, add the diced tomato, tomato puree Anchovy sauce, Tamarind Sauce, Brown sugar and chilli to taste.
3: Add chicken stock to the sauce and add the mussels. Mix well and place the lid on the pot. Once the Mussels have opened (which should take about 5-10minutes) they are ready to serve sprinkle lots of chopped parsley on top and enjoy.
Have plenty of fresh bread on the table to mop up all the yummy sauce!
Variation: Make some spaghetti and pour the sauce and mussels on top.

Looks great and yummy, but if I dont have tamarind sauce could I just leave it out? Will have to try this!
Hi Jonathan, don’t worry about the Tamarind sauce if you don’t have it just add a good squeeze of lemon juice instead. Enjoy

These were the most delicious mussels I have ever eaten. The sauce is beautiful. It was not possible to stop dipping in the bread until all the sauce was gone.
lol you could always convince the chef to double the sauce componant …. just for the dipping
