- 1/2 cup coriander, finely chopped
- 1/2 cup mint, finely chopped
- 2 x spring onions, finely chopped
- 2 Tbls dijion mustard
- 2 Tbls olive oil
- 1/2 x lime, juiced
- 1 Tbls plain yoghurt or sour cream
Place all of the ingredients for the dressing into a jar and shake until combined. If the dressing is a bit thick, feel free to add some more lime juice or olive oil.
This dressing is great on salads full of spring vegetables, such as my Bulgar and Spring Vegetable Salad. It would also be good as a dip for carrot sticks or even crisps.
