Ingredients

  • 500 g veal mince
  • 2 tspn ground cumin
  • 1 tspn ground paprika
  • 1 x taco mix packet
  • 2 x onions, diced
  • 2 cloves garlic - finely diced
  • 100 g kidney beans, soaked overnight
  • 1/2 cup red wine
  • 4 x roma tomatos, blanched, skinned and mashed
  • 1 x avocado
  • 4 sprigs corriander, tender young leaves shredded
  • 1/2 x lime, juiced
  • 1 cup grape tomatoes, sliced
  • 1/2 cup soured cream
  • 1/4 cup jalapeño,sliced preserved (optional)
  • 1 cup sharp cheddar cheese, grated
  • 300 g corn chips
  • 1 pinch salt and freshly ground pepper to taste
  • 1 Tbls extra virgin olive oil
  • 1 bunch baby salad leaves

Method

In a large heavy based pan heat your oil and saute the onions, garlic, cumin and paprika until the onion is just transparent.
Add the mince and brown well. Add the taco mix, wine, kidney beans and tomatoes and stir well. add enough water to almost cover the mix and place the lid, reduce the temperature to a low simmer and allow to simmer for 40 minutes, remove the lid and allow to reduce to a thick meat sauce of your liking. Season to taste.

Make your guacamole by mashing your avocado, corriander and lime juice. A fine shred of lime zest would add zing.

heat your oven to 200degC and place the corn chips in an oven proof dish and place in the oven and turn the oven off and allow the chips to become warmed through. Remove from the oven and place in pasta bowls for each serving

Arrange you sour cream, jalapeño, guacamole, salad leaves, cheese and grape tomatoes on a lazy susan with suitable serving implements. The centre of the lazy susan is reserved for your meat sauce.

Your guests serve themselves and create bite sized flavoursome morsels to suit their tastes.

serves 4 with lots of laughter, relaxed atmosphere, adequate serviettes and a good red wine.
