  • 125 g butter
  • 1 cup plain flour
  • 1/2 tspn bicarbonate soda
  • 1 cup mixed fruit or sultanas
  • 1 x egg
  • 1/2 cup caster sugar
  • 1 cup boiling milk
  • 2 tspn grated orange rind


Rub butter through flour with fingertips. Add mixed fruit and sugar. Bring milk to the boil. Beat egg and add milk and egg to flour mixture. Mix well. Pour mixture into greased and lined 8″ square cake tin. Bake in moderate oven for about 40 mins or until skewer comes out clean.

N.B. This is a runny mixture so you can add a little extra flour

I ice this cake with orange icing and candied orange peel.
