Ingredients

  • 55 g butter
  • 1/2 cup castor sugar
  • 1 x egg
  • 1/2 cup milk
  • 1 cup s.r. flour
  • 1 tspn vanilla essence
  • 1/2 cup brown sugar (filling)
  • 2 Tbls melted butter (filling)
  • 1/4 cup coconut (filling)
  • 2 tspn cinnamon (filling)
  • 1/2 cup chopped walnuts (filling)
  • 2 Tbls plain flour (filling)

Method

Pre-heat oven 150 degrees (fan forced)

Filling – Place all the filling ingredients into a bowl and mix well. Put aside

1. Cream butter & sugar, then add vanilla essence and egg. Beat well.

2. Sift in S.R. flour and add milk. Mix well

3. Put half of the mixture in a log tin then spread half the filling mixture over this. Add the remaining cake mixture, and spread the remaining filling mixture on top.

Bake for 40 – 45 mins
