  • 150 g butter
  • 150 g dark chocolate
  • 1/2 cup custar sugar
  • 1/2 cup dark brown sugar
  • 3 x eggs
  • 3/4 cups flour
  • 1 Tbls cocoa powder
  • 1/4 tspn salt
  • 30 ml thickening cream
  • 2 Tbls smooth peanut butter
  • 280 g dark chocolate (56% or more)
  • 150 ml thickening cream
  • 580 ml thickening cream
  • 150 g crushed peanuts
  • 1/2 cup smooth peanut butter
  • 80 g soft butter
  • 1/2 cup icing sugar


(According to the ingredients list order)

For the Brownie base:
1. turn on the oven to 180 degrees
2. Melt the butter and chocolate in microwave
3. beat both sugar types with the eggs
4. add eggs mixture to the melted chocolate
5. fold in the flour, cocoa powder and salt
7. warm the peanut butter and thickening cream in the microwave till it’s fluid
8. pour the mixture into a 24″ tin and drizzle the peanut butter mix on top. run the tip of a knife in the mixture to slightly combine the peanut butter into the brownie mixture
9. bake for 20-25 minutes and leave to cool before making the mousse

For the chocolate mousse:
1. get the 150 ml of thickening cream to boil and pour over the chocolate, mix till it’s all melted. set aside to cool for a bit
2. Whip the rest of the cream (560 ml) till it’s firm
3. fold in the crushed peanuts into the melted chocolate and then fold in the whipped cream
4. line the sides of the tin with acetate strip and pour the mouse mixture on top of the brownie
5. place in the fridge to set for an hour

for the peanut butter frosting:
1. whisk the peanut butter and soft butter till combined
2. add the icing sugar and continue whipping till light and airy
3. place in a piping bad with your choice of a nuzzle
4. decorate cake as you wish

**note, I placed Reese’s peanut butter candies on top :)
