- 250 g okra cut 1/2 inch
- 2 tspn oil
- 1/2 tspn mustard seeds
- 1/4 tspn fenugreek seeds
- 1 x onion medium sized finely chopped
- 2 tspn tamarind paste
- 1/4 tspn turmeric powder
- 1 tspn sugar
- 1 tspn chilli powder
- 1 x medium size tomato chopped
- 1/2 tspn salt(adjust according to taste)
- 1/2 bunch coriander leaves
- 4 x eggs
-Boil eggs and set aside
-Mix tamarind paste with ¼ cup water and set a side
-Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add fenugreek seeds and onions and saute.
-When the onions brown, add turmeric powder, red chilli powder,salt and mix well
-Now add chopped tomatoes and 1/2 tspn ginger garlic paste and saute them and cook till the tomatoes are mashed up.Add sugar and saute again/
-Add Okra and fry for a minute
-Add the tamarind juice and mix well.
-Add ¼ cup water and let it come to a boil. Reduce heat and simmer for 3-4 minutes or till the ladyfingers are cooked
-Now make some cuts on the boil ed eggs and add them to the curry
-Leave it on low flame for 5 to10 minutes.
-Add chopped coriander leaves when curry is done.
It tastes absolutely delicious with rice..
Note: Remember to make small slits to the eggs otherwise they will break up in the curry.and make sure the pan is not covered.
