Ingredients

  • 250 g plain flour
  • 1 1/2 tspn baking powder
  • 1/4 tspn salt
  • 3/4 cups granulated sugar
  • 2/3 cups olive oil
  • 3 x eggs
  • 1/2 cup milk
  • 500 g strawberries
  • 1/2 cup granulated sugar
  • 1 x juice of a lime
  • 5 x sprigs of thyme
  • 225 g soft, unsalted butter
  • 4 cups icing sugar
  • 1 Tbls milk
  • 1/4 cup strawberry compote syrup

Method

Makes 12

For the cupcakes

250g plain flour
1 1/2t baking powder
Pinch salt
3/4 cup granulated sugar
2/3 cup olive oil
3 eggs
1/2 cup milk

For the compote

500g strawberries
1/2 cup granulated sugar
juice of a lime
a few sprigs of thyme
pinch salt

For the buttercream

225g soft, unsalted butter
4 cups icing sugar
1T milk
1/4 cup syrup from the compote

Cupcakes
Preheat oven to 180C
1. In a stand mixer with the whisk attachment, whisk together the sugar + olive oil
2. Whisk in eggs one at a time waiting a minute between additions
3. Alternating between, whisk in flour + milk in 5 additions, beginning + ending with the flour
4. Once combined, fill cupcake liners 2/3 full and bake for 17-20 mins. I check at 17 mins and they’re usually done.

Compote
1. Tie the thyme with food safe string
2. Place strawberries, sugar, lime juice + thyme in a pot on medium heat on the stove + reduce to a syrup
3. Remove from heat and cool

Buttercream
1. In a stand mixer with the beater attachment place butter, icing sugar + milk, beat until light + fluffy
2. Add syrup + beat until combined

Using a cupcake corer, removed the center of your cupcakes. Fill with your strawberry compote, frost with the buttercream + top with a tiny sprig of thyme.
