  • 1 kg fish fillets (of your choice)
  • 1-2 x onions, roughly chopped
  • 4-5 x tomatoes
  • 1/2 Tbls brown sugar
  • 1 Tbls lemon juice
  • 1 Tbls sliced black olives
  • 1 tspn baby capers
  • 3 x garlic cloves, crushed


Heat oil in frying pan, add onion and fry for 2 minutes.
Cut the tomatoes into pieces and add to the pan. Stir.
Add sugar, lemon juice, salt, pepper, olives, capers and crushed garlic and stir. Reduce heat, cover with lid and simmer for 5 – 7 minutes. Taste for salt and sugar.
While the tomato mixture is simmering cut the fish fillets into medium sized pieces. Open the lid, cover tomato sauce with the fish pieces. Sprinkle with fresh dill or parsley. Replace the lid and simmer for approx.10 minutes until the fish is cooked through.
Grill or toast both sides of the bread.
To serve – place a slice of toast on a plate, top with the fish and sauce. Garnish with parsley.
